Tasty, easy and fast vegetable dish
Onion Celery Kale Stirfry
Ingredients:
- Yellow onion (1 large or 2 small)
- Celery
- Kale (1 bunch)
- Hot pepper (this recipe uses 1 Big Bomb pepper)
- Garlic (2 cloves)
- Salt
- Pepper
- Ginger oil (2 drops) or fresh grated ginger
- Olive oil
Cut vegetables. Cut onion in small wedges rather than slices. Chop garlic (don’t press)
Cover the bottom of a stainless steel frying pan with olive oil. Turn to medium heat and immediately add chopped garlic and pepper. Stir until slightly cooked, then add onion and celery. Continue cooking on medium, stirring frequently. After a few minutes, add the kale (you can substitute with Collard greens if you wish). Add salt and pepper to taste and add a couple of drops of essential oil of ginger or the grated ginger. Turn heat down to low, put a lid on, and simmer until done.
You do not want to overcook this dish. The best indication is the onions, they should still be firm, and should not have turned overly sweet and soft. The dish is done when the onions are slightly soft, still offering a nice “chewing resistance”.
This veggie dish is great by itself, and it also makes a perfect side dish for chicken or fish.
