Oven Roasted Potatoes with Rosemary
I love this dish, because it is so quick and easy to put together, and the potatoes always turn out just perfect. It is a fast and easy recipe. The first time I made it I was worried about the high temperature, and wondered if the potatoes were going to either end up charred, or that the olive oil would create a whole lot of smoke, but they end up absolutely perfect after about half an hour.
cut the potatoes in small chunks
place in glass baking dish
sprinkle with olive oil
add salt (3/4 teaspoon)
pepper
rosemary
dill (both seeds and weed)
Toss oil and spices with potatoes until evenly dispersed. Bake in 500º oven for 30 minutes or until done.
Aside from the ease of preparing this recipe, I really like playing around with it by simply either using completely different spices, or by using additional spices. Some of my favorite additions are:
- pressed fresh garlic
- thyme
- fresh oregano, finely chopped
- tarragon
- ground sumac (be sure to grind very, very fine to avoid hard pieces)
- hot pepper flakes
Served here with broccoli flash boiled in water flavored with lemongrass and ginger, and pan fried hot pepper chicken.
